A lot of auto shut off instruments have a power up sequence to disable the
auto shut off. Usually something like hold button x while turning on.

Look for a Fluke 80TK Thermocouple Module. You plug a thermocouple into
it, and it plugs into a DMM. No automatic shutoff.
